Eggy Oatmeal with Fruit

The weather has been pretty miserable here in the UK over the past couple of weeks and nothing screams cozy like a warm bowl of oatmeal for breakfast. This is my ultimate cooked oatmeal breakfast and yes, there are egg whites in the recipe. Eggs, you may ask?! I assure you this is not a typo - I add two egg whites at the end of the cooking process and this gives the oatmeal a fluffy, velvety texture leaving you feeling satisfied and ready to start your day!

Small sauce bowl

Ingredients <see photo below>

1/3 cup dried oats

1/3 cup = 2 eggs whites

Fruit - as desired, here I used fresh blueberries and raspberries which you can also easily substitute with frozen berries or banana and peanut butter - options are endless!

Nuts - as desired, here I used pistachio, however you could easily use walnuts or any other nut or peanut butter

Maple Syrup - 1 tablespoon

Ground Flaxseed (not pictured) - 1 tablespoon

Let's start cooking!


Step 1: Add one cup of water to sauce pan and bring to boil


Step 2: Add 1/3 cup dried oats, reduce heat to a low simmer (otherwise foam will rise)


Step 3: Let oats cook, stirring occasionally until water has evaporated, about 5-6 minutes


~If using frozen fruit, you will add it here, before the egg whites. The fruit will expel water so let that reduce/evaporate before adding egg whites~


Step 4: Add 1/3 cup of egg whites, stir continuously until incorporated and once brought to a boil turn heat off (bubbles will form once you stop stirring)


Step 5: Plate and add your fresh fruit, nuts and maple syrup
